Shabu Shabu  しゃぶしゃぶ

Shabu Shabu is a popular Japanese meat dish similar to sukiyaki, consisting of thinly sliced beef and vegetables which are dipped into a boiling stock and eaten with special sauces.

One key difference between shabu shabu and sukiyaki is that with shabu shabu the meat and vegetables are only dipped into the boiling stock. They don't sit and cook inside the nabe for a long period of time like sukiyaki. Another difference is that you do not dip the cooked meat into raw egg before eating.

Some other things to expect while eating Shabu Shabu

Hakusai: This is Chinese cabbage.
Shiitake: These are Japanese mushrooms.
Yakidofu: This is grilled tofu.
Gomadare: This is a thick dipping sauce made from crushed sesame seeds.
Ponzu: This is a thin, vinegary dipping sauce made from the juice of sudachi (bitter orange) or lemon, soy sauce and fish stock (dashi).
